EGGPLANT IN SZECHUAN SAUCE

INGREDIENTS 

15 lb egg plant

10 oz ginger fresh

10 oz garlic fresh

chicken stock as required

2 lb cornstarch

10 oz chili paste or blended sambal olek

19 oz soy sauce tamari

2 lb tomato ketchup

1 oz sichuan peppercorns

3 bu green onion

2 lb onion red

4 bun celery

15 oz oil vevgetable

10 ea whole dry red chili

19 ea hoisin sauce

11 oz oyster sauce

PROCEDURE 

peel and cut eggplant in to big dices season  and toss in cornstarch. Deep fry till crisp to order.

peel and cut vegetables as you like diamond and junienne or as you like - onions in dices, celery sliced on a slant, carrots cut in serrated half moon shapes.

FOR SAUCE- vegetable oil, dry red chili, chopped celery, ginger, garlic, chili paste, hoisin sauce, oyster sauce, soy sauce tamari, tomato ketchup, chicken stock, seasoning. Thicken with cornstarch.

stir fry vegetables and add crispy fried eggplant. Coat  with sauce and finish with chopped scallions.
