CRISPY CHICKEN IN BLACK PEPPER SAUCE

INGREDIENTS

10 lb chicken thigh boneless

12 oz corn starch 

6 ea egg white 

12 oz vegetable oil

4 oz garlic peeled

6 oz ginger fresh chopped 

2 oz chili paste / sambal olek

6 oz oyster sauce 

4 ea serrano chili /green chili chopped

8 oz soy sauce tamari 

chicken stock as required

salt to  taste 

2 oz crushed black pepper 

sugar to taste 

2 bu scallion

4 oz chili oil 

1 lb red pepper 

1 lb green pepper 

1/2 carrot

2 broccoli 

PROCEDURE 

clean and cut  chicken thigh in julienne .Marinate with corn starch, egg whites,ginger, chili paste and garlic. Deep fry until crisp.

cut all vegetables as you like in small pieces . cut broccoli in small florets, slice carrots, peppers cut in diamonds.

for sauce vegetable oil, garlic, ginger, chili paste, soy sauce, oyster sauce, sliced green fresh chilies, crushed black pepper and chicken stock. Thicken with dissolved corn starch.

stir fry vegetables. Add fried chicken and coat with sauce . Thicken with corn starch if required.

finish with scallions.
