ingredients
3 lb of shrimp green
3 lb of shallots
300 ml fish sauce
7 oz of blended sambal olek
11 lb garlic peeled
2 lb tomato paste
1 lb oyster sauce
400 ml tamari soy sauce
1/2 litter vegetable oil
salt to taste
white pepper powder to taste
procedure
grind shirmps to a fine paste and mi in fish patis .Layer on sheet tray thin and dry out
completely in a warm oven 350 F for 38 mt . product will be like a wafer
cool the wafers down and crushed it , make a like powder.
peel and chop shallots or fine julienne .chop garlic
saute shallots ina a wok until golden brown add garlic , keep sauteing till garlic cooked . add sambal
paste , keep sauteing till mixture leaves oil.
add oyster sauce, tamari soy shrimp powder cook for another ten more minutes
and season it
cool , blast chill and store under refrigeration
