tomato ginger soup
this recipe i learnt when i worked in cruise lines
ingredients
3 gal of chicken stock
2 lb of tomato fresh
10 oz of ginger
4 ea of green chili fresh chopped
24 oz tomato ketchup
4 ea of tomato paste
6 ea of star anise
12 oz of soy sauce kikkoman
1 oz of hot sauce
taste salt
taste sugar
taste white pepper powder
4 oz of chicken base minor
14 oz of corn starch
15 ea egg whites
3 bu of cilantro
2 bun of scallions
2 oz of ginger juice
procedure
saute ginger , green chilies and start anise . add tomato ketchup and tomato paste .add chiken stock and simmer . thicken lightly with dissolved cornstarch.
blanch de skin , deseed and cut tomatoes into brunnoise . add to the simmering soup.
whisk egg white lightly, pour in to the simmering soup in a single line stirring with ladle so it forms strings.
correct seasoning and finish with chopped cilantro and scallions.
