BABY CORN ANDASPARAGUS IN GINGER CHAR SIU SAUCE
INGREDIENTS
3 corn
10 lb asparagus
2 lb red onion
50 oz vegetable oil
10 oz garlic
6 oz ginger
30 oz soy sauce kikkoman
11 sambal olek/chili paste
36 char siu sauce
16 oz tomato ketchup
chicken stock as required
8 oz cornstarch
10 oz tomato paste
1 ea green chili fresh
3 bunch scallion
4 lb red pepper
salt to taste
white pepper powder to taste
sugar to taste
sesame oil to taste
PROCEDURE
3 corn
10 lb asparagus
2 lb red onion
50 oz vegetable oil

8 oz cornstarch
10 oz tomato paste
1 ea green chili fresh
3 bunch scallion
4 lb red pepper
salt to taste
white pepper powder to taste
sugar to taste
sesame oil to taste
PROCEDURE
- cut baby corn on a slant in to halves . Cut asparagus in to same size as of baby corn on a slant and red peppers in batons.
- peel and cut onions in petal.
- for sauce -vegetable oil, chopped garlic, chopped ginger,soy sauce kikkoman, sambal olek, chaarsiu suce , hoisin sauce, tomato ketchup, chicken stock, cornstarch and seasoning.
- stir fry onions and ginger, add vegetables and stir. coat with sauce and thicken with cornstarch if required
- finish with scallions and sesame oil
