LEMON GINGER CHICKEN
this is one of my favorite recipe is a delicious combination of flavors
INGREDIENTS
10 lb chicken thigh boneless
8 unid egg white
12 oz corn starch
1 lb red pepper
1 lb red onion
2 lb chili
1 lb baby corn
1/2 lb carrots
12 oz vegetable oil
8 oz ginger
scallion
3 oz dry whole red chilies cut on a slant
6 lemon grass
1 cup of lemon juice
white pepper powder to taste
chicken stock as required
PROCEDURE
cut chicken thigh in juliennes. Marinate with egg white, garlic, ginger, salt and white pepper.
peel and cut vegetables as per specifications-peppers and red onion in to diamond. carrots sliced in diamond shape. baby corn sliced thick on a slant.
for sauce - vegetable oil, juliennes of ginger, whole dry red chilies, green chilichicken stock, lemon concentrate juice , lemon leaves, lemon grass, sugar . Seasoning and simmer for a while .Thicken with dissolved corn starch.
stir fry chicken in a wok and add vegetabkes .Stir .Coat with sauce and braise until chicken is cooked .Thicken with corn starch if needed.
garnish with scallions
